Soppressata is a traditional Calabrian product, it is made of fresh pork meat selected from ham and loin. The meat is minced adding salt, natural aromas and a small quantity of peppers grown in Monte Poro (close to Spilinga). The mixture is stuffed and pressed into natural casings. Then it is hung to dry and to be smoked in a humid and cool environment for 12 weeks , losing about 30% of its original weight. It is sliced thin and placed into sandwiches or eaten with good Calabrian cheese and broad beans.
