Calabrian Sausage
PRODUCT DESCRIPTION:

Sausage is a traditional Calabrian product, it is made using pork meat selected from the shoulder. Mixed with a small quantity of peppers grown in Monte Poro (close to Spilinga) and natural aromas are minced adding salt, this mixture is stuffed into natural casings. Then hung in a cool humid environment to be smoked and to slowly dry and absorb all the aromas.
